So magikgrrl just posted a yummy-sounding recipe, which I promptly sent to my husband. He’s the “real” cook around here. Anyhow, I feel brave enough to post my meatloaf recipe, which I think is quite good. And judging from the fact that DH will request it, I think he likes it too.
Jen’s “What’s in the Fridge” Meatloaf
2 lb hamburger
2 eggs
1/2 cup BBQ sauce of your choice. [1]
1 tbsp Heinz 57
1 tbsp A1
1 tbsp soy sauce
2 tsp Worstechestershestersheister
1/2 tsp seasoned salt
2 tbsp chopped dried onions (or fresh chopped) (or as much or as little as you like)
1 tbsp chopped/minced garlic (or as much or as little as you like)
1 1/2 cups (ish) bread crumbs [2]
Mix all ingredients except bread crumbs in a bowl. Add bread crumbs until it’s a nice meatloafy consistency. I start out with a cup and add more as necessary Sauce measurements are suggestions.
Put mixture into a loaf pan, brush bbq sauce on top. Bake for about an hour at 375 degrees.
[1] Right now, we like Jack Daniels BBQ sauce.
[2] Progresso Garlic & Herb bread crumbs. Yum.

If you make it, lemme know how it turns out. Until yesterday I didn’t have a recipe – I just threw it together. I tried to measure properly, but I don’t know for sure if it’ll work right. LOL
I think it was closer to 2 1/2 pounds of meat this time. :)

Heh – I have never made meatloaf – My hubby won’t touch the stuff! :) And I never wanted to eat the whole thing myself – but I think it might make a good meal for work…so I will see if I can’t make it. I will let you know if I do and if it turns out! :)

Hehehe – Actually it was more bread crumbs – but I like the parmessan idea! Everything tastes better with cheese! ;)
